Meatless Monday: Mini Eggplant Pizzas!

Hey everyone, so I've been really into cooking lately, usually I just stick to the microwave but I decided to give cooking a whirl and I'm doing pretty well with it. As some of you know, I'm vegetarian/pescatarian (I don't eat meat but I do eat fish) and I know some of you guys aren't but it's always nice to hear about a yummy meatless recipe every once in a while. In fact, there's actually a website called Meatless Monday that has a load of recipes just for a meatless monday. So I figure I'd give you guys a recipe on Mondays for some yummy recipes.

This week, it's a really simple recipe for delicious mini eggplant pizzas!

Ingredients:

1 eggplant - peeled and cut into 4 half-inch thick slices
4 teaspoons olive oil
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup pasta sauce
1/2 cup shredded part-skim mozzarella cheese

Directions:

Preheat the oven or toaster oven to 425 degrees F. Brush both sides of the eggplant with the oil and season with the salt and pepper. Arrange on a baking sheet and bake until browned and almost tender, 6 to 8 minutes, turning once. Spread 1 tablespoon, or however much you want, of pasta sauce on each eggplant slice. Top with the shredded cheese. Bake until the cheese melts, 3 to 5 minutes. Serve hot.

Number of Servings: 4

To be honest, it took me about like 12 minutes for the eggplants to bake and I may have put more than the amount of pasta sauce and cheese it said on the recipe, but it's all up to you with that.

It's a very simple recipe, the mini pizzas taste delicious and it's super quick to make. Definitely a great healthy alternative to regular pizza, especially when you use the eggplant as crust.

  3. I do eat meat, but when I was growing up whenever my mom made Eggplant we didn't eat meat.
    I think I'd really like this recipe, so I think I'll be giving it a try.
