Meatless Mondays: Parmesan Couscous Stuffed Bell Peppers!

Hey guys, I literally made this deliciousness tonight. It is a super duper easy recipe and creates very delicious stuffed peppers. I tweaked this recipe from one I found to my own liking a bit, but yeah, check it out!

Ingredients:

Around 1 cup cooked couscous
1-2 medium to large bell peppers
1/4 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, shredded
1 vegan burger patty, crumbled (I used Morning Star)
1 medium clove garlic, minced
1-2 drizzles olive oil
1/2 cup grated Parmesan cheese

Directions:

1. Cook couscous according to package directions. For peppers, grill or roast pepper until skin is blistery and black or boil for about 3-5 minutes, until softened.

2. In a bowl, add couscous, garlic, crumbled veggie burger, and both cheeses. Combine until mixed well.

3. Preheat oven to 350 degrees F. Stuff peppers with couscous filling. You should have enough for two large peppers.

4. Top pepper with more mozzarella cheese if you want, olive oil and place in oven until cheese and mixture are heated, approximately 5-10 minutes. Top with a sprinkle of parsley for garnish.

Serves: 1-4, Preparation time: 30 mins.

So delicious! Even if you're not a vegetarian, add in crumbled meat instead of a veggie burger, it's so good!
